- 2 lb. turtle meat
- butter or margarine
- 1 onion, sliced
- 2 c. celery, sliced
- 1 c. lima beans, soaked
- 3 potatoes, diced
- 3 carrots, sliced
- 1 can tomatoes
- 1/2 c. chopped parsley
- salt and pepper
- 2 bay leaves
- 1/2 tsp. garlic powder
Method
- Cut up the meat in 1-inch cubes.
- Brown in butter or margarine.
- Place remaining ingredients in a stew pot, add water and bring to a boil.
- Lower heat and simmer for about 30 minutes. Add the turtle meat and cook slowly for 45 minutes or until meat is tender.
